Asian BBQ Salmon Salad

Ingredients

1 ¼ lb. fresh salmon fillet

½ english cucumber unpeeled,sliced into  ¼ inch ½ moons

 1/2 cup favorite bbq sauce

2 tsp. teriyaki sauce 

2 tbl. Fresh lemon juice 

3 tsp. sesame oil 

fine sea salt

½ tsp. garlic powder black pepper

 1 large romaine lettuce

 black and white sesame seeds for garnish

 

Directions

Preheat oven to 350. Spray abaking pan or broiler pan with non stick cooking spray. Set aside

Cut the salmon into 2-inchcubes. Set aside

In a medium bowl, whisk the bbqsauce, teriyaki sauce, 2 tsp. sesame oil, and garlic powder.

Add salmon cubes to bowl andtoss to coat.

Place salmon in single layeronto the prepared pan and bake for 10-12 minutes or until cooked through.

In a bowl, combine the lettuceand sliced cucumbers. Season with salt and pepper. Toss with lemon juice and 1tsp. sesame oil.

Place the salmon cubes on topof the salad. Garnish with black and with sesame seeds.
