½ cup rice flour
½ cupspelt flour
1 tsp baking powder
½ tsp salt
¼ cup olive oil
1/3 cup almond milk(add more if too dry)
2 tbsp caraway/sesame/pizza flavored seeds. (Choose oneor make all of ‘em!) Reserve 1 tbsp
Mix first 4 dry ingredients(blended well). Add 1 tbsp of seeds and mix again.
Add oil and mix until clumpy.Add milk and mix to soft dough. Roll out onto (lightly floured) 1/8 inch thickdough and form a rectangle. Place onto cookie sheet. Cut into 2” squares.
Brush with milk over top ofcrackers. Sprinkle the other tbsp seeds over top. Add more if needed. Bake at350 degrees for 5 minutes. Raise temp to 400 and bake approximately 1.5 to 2minutes or until edges turn slightly brown.
Let cool and do not cover. (Weleft ours on a paper plate in the cold oven for days)
