Cherry Tomato and Yellow Squash Crumble

3 tbls butter 

1 3/4 cupbread crumbs 

2 tbl. finely chopped parsley 

1 small yellow onion chopped (1cup)

1/2 lb yellow squash diced (2cups) 

3 cups cherry tomatoes 

1 garlic clove minced

1/2 cup grated swiss cheese


Preheat oven to 400, Spray 9inch square baking dish with cooking spray

Heat butter in skillet overmedium heat until melted. Pour 2 tbls. of butter over bread crumbs in bowl.Stir in parsley.

Return skillet to burner andincrease to med/high. Add onion and cook 7-9 minutes or until beginning to turnbrown.

Stir in squash, and cook 4minutes. Add tomatoes and garlic, cook 2 minutes more or until tomatoes arewarm through. Season with salt,if desired. Transfer mixture to prepared bakingdish. Sprinkle cheese on top. Spread breadcrumb mixture over cheese. Bake 30-35minutes or until golden and bubbly. Serve hot.
