Kale with Leeks

1 lb. kale stemmed and chopped 

1 tsp. olive oil 

2 leeks 

1/4 tsp. salt 

2 tbl. balsamic vinegar 

1/3 c.dried cranberries

 1/4 c unsalted walnuts/toasted (optional)


Bring a large pot of water to aboil. Add kale and cook until just tender, about 3to5 minutes. Drain kale andsqueeze out excess water. Transfer kale to a large serving bowl. Meanwhile,heat oil in a large nonstick skillet over medium heat. Add leeks and saute for3 minutes or until tender. Stir leeks into kale, mixing well. Stir in salt anddrizzle with vinegar, mixing well. Top with cranberries and walnuts, if desired.
