Sauteed Vegetables with Spaghetti Squash

1 medium spaghetti squash 

1small onion

1/2 cup green pepper chopped 

2 med. zucchini sliced 

2 stalksbroccoli/ florets only 

3 tbl. parsley 

clove garlic salt and pepper 

fresh grated parmasan cheese


Wash squash and dry. Pierceseveral times with fork. Place in microwave on high for 6-7 minutes per pound.Let cool. Halve lengthwise and scoop out seeds. Scrape out spaghetti-likestrands with a fork.

Melt butter in a large skillet.Saute onion, garlic and green pepper for 2 minutes.

Add remaining vegetables andsaute another 5-7 minutes.

Stir in parsley an seasonings.

Add spaghetti squash and tossgently; heat thouroghly. Sprinkle with chesse before serving
